Roasted Pepper, Mushroom & Goat Cheese Bruschetta

Ingredients
  

  • 1 tsp olive oil
  • 3 sprigs thyme
  • 1 cup baby bella mushrooms stemmed & chopped
  • 1/8 tsp dried oregano
  • 1/8 tsp garlic powder
  • 1 red bell pepper roasted, peeled & chopped
  • 6 cherry tomatoes quartered
  • 1 Tbsp chopped fresh basil
  • S&P to taste
  • 1 1/2 Tbsp goat cheese
  • 1 Tbsp olive oil
  • 4 slices of ciabatta or other chewy bread with a crisp crust

Method
 

  1. Turn your broiler to high with the rack on the second closest notch to the top. Lightly brush both sides of the bread slices with olive oil. Toast under the broiler until lightly crisped, about 2-3 minutes per side. Watch them carefully because broilers are hot and some cook faster than others!
  2. In a skillet, heat olive oil with thyme sprigs over medium heat. When hot add mushrooms, oregano & garlic powder and saute for 6 minutes, until mushrooms are tender.
  3. Add roasted bell pepper, tomatoes and basil. Cook for another 2 minutes, until all ingredients are heated through. Season to taste. Remove from heat and set aside.
  4. Spread a thin layer of goat cheese on the toasted bread slices and top with bruschetta mixture and garnish with a basil leaf. Serve hot.
