Fresh Salsa

Servings: 2 cups

Ingredients
  

  • 28 oz. whole tomatoes with juices 1 can
  • 1/4 tsp ground cumin
  • 2 cloves garlic minced
  • 2-3 roasted jalapenos
  • 1 tsp olive oil
  • S & P
  • 1/2 bunch cilantro chopped

Method
 

  1. Turn your broiler to high. Line a baking sheet with foil and place jalapenos on top. Roast under the broil for 5 minutes per side or until they have a nice char. Let cool and remove stems.
  2. In a food processor, add tomatoes, cumin, garlic and jalapenos. Pulse until it reaches desired consistency.
  3. Add olive oil and season to taste with salt and pepper. Pulse to combine.
  4. Pour salsa into a bowl and stir in chopped cilantro.
