Corn, Black Bean, Avocado Salsa

Ingredients
  

  • 1 ear of corn
  • 1 cup tomatoes chopped
  • 1/3 cup red onion chopped
  • 1 small avocado cubed
  • 1-14 oz. can black beans drained and rinsed
  • 1 Tbsp jalapeno seeded and chopped
  • 1/4 cup cilantro chopped
  • 1 clove garlic minced
  • 1/8 tsp cumin
  • 1 Tbsp lime juice
  • salt to taste

Method
 

  1. Remove husk and silks from corn. Preheat your grill over medium heat. Spray corn with Pam and grill until lightly charred.
  2. Let corn cool and then cut kernels off the cob.
  3. In a bowl, combine all ingredients through lime juice.
  4. Season to taste. Chill in refrigerator until ready to serve.
  5. Serve with baked tortilla chips.
