Gazpacho with Shrimp

Depending on where you live, summer may have already arrived, or maybe it’s not quite there yet. With temperatures in the 90s last weekend in Chicago, I think I can mark the Memorial Day holiday as the official start of summer. I’d also like to say that I hope temperatures drop a little. There’s no AC in our little old apartment.

Ginger & Sriracha Sprouts

Are Brussel sprouts really from Brussels, Belgium? Either way, I’m crazy about Brussel sprouts! The ginger and sriracha in these makes them jump off the plate! Well, not literally, but the flavors sure do. They make a great side dish for any Asian main dish or for a light meal with brown rice. Enjoy!

Sauteed Kale & Red Onions

This perfect Thanksgiving side dish is full of calcium, vitamin C, beta carotene and cancer-fighting properties (via WHfoods.org). It’s quick to make and absolutely delicious. I’d take this over spinach anyday! Simply double the recipe for larger groups.

Pot Roast

I like to cook this one day before and let it cool in the refrigerator. Once it’s cool, I scrape a good amount of the hardened fat off the top to make it even lighter. Don’t get rid of all of it though, it adds flavor! Serve on top of our roasted garlic mashed potatoes.
