Steak & Arugula Salad

And the holidays are finally here! Like, really here. Have you done your shopping? Decorated the house? I find myself getting so stressed out and tired this time of year. Especially this year. Oliver, my new shiba inu puppy, has been keeping me super super busy. Naturally, he’s sleeping now.

Kale, White Bean & Quinoa Soup
After going home for Thanksgiving I’m on a bit of a vegetarian cook. I guess it makes sense since many of my meals at home were made up of mostly veggies thanks to my dad. I’m not complaining. The past few weeks I’d been eating pretty poorly and my body needed a cleanse of sorts. Strange, usually holiday foods are what cause your body to need a cleanse…

Homemade Basic Granola

I’ve been adding Greek yogurt to my regular breakfast each morning and while I like yogurt on it’s own, it’s so much better with some crunchy granola on top! I’d been buying it for years, but could never eat it all before it went stale. After some research I realized how freaking easy it is to make!

Truffled Asparagus & Mushroom Flatbread
It’s been one of those weeks where nothing seems to get checked off your list, but at the same time, you feel like you’ve been going 90mph. I think that the mid-week 4th of July celebration was the real culprit. Knowing that I only had to work for two days before getting a mini-weekend was great, but not good for productivity. Last Thursday was so miserably hot, at times I felt like I could barely breath.
Faux Pho

Pho is in my top 5 favorite foods ever. I literally dream about this soup. It’s pronounced, fuh. Not fo or fa. The traditional preparation calls for simmering bones with herbs and spices for a long time. This is the quick and just as delicious version! The dish’s full name is pho ga (fuh-ga, see you got it!), meaning chicken pho. Sometimes it’s made with beef, pho bo, but I like this version better. This Vietnamese soup is perfect on a cool night and is hearty, aromatic and so delicious! The flavors are so unique and come together perfectly. I make the pho broth in bulk and freeze it in individual containers for easy one -person meals!
Breakfast Sandwich for One

This is my go to breakfast! It’s quick and filling and gets my day started right. Sometimes I don’t have all the ingredients and omit arugula & tomato. If I have avocado on hand, I’ll add a thin slice for a bit of creaminess!
BBQ Chicken Pizzas

I’m a pizza nut! Love the stuff. Who doesn’t? But occassionally I like to break habit and go for something a little different than my go-to arugula and prosciutto pizza. This BBQ pizza is a twist on the traditional pizza, and is so delicious! The combination of flavors is out of this world!
